Trick or treat: Pumpkin, raisin and cinnamon cookies recipe
1. Preheat the oven to 180C/160C fan/gas 4. Mix together the butter and sugar until light and creamy. Beat in the egg, vanilla extract and pumpkin purée.
2. In a separate bowl, mix together the oats, baking powder, cinnamon, salt, raisins and flour. Stir this into the pumpkin mixture.
3. Place spoonfuls of the cookie dough onto a greased non-stick baking tray (or one lined with non-stick parchment paper) and flatten with the back of a spoon. Place in the oven for 12-15 minutes until slightly golden. Remove and cool on a wire rack.
