INGREDIENTS
* 1/2 tsp salt
* Cooking oil spray
* 450g/1lb lean minced beef
* 100g/4oz cup diced onion
* 100g/4oz sliced celery
* 50g/2oz sliced carrots
* 1 410g can red kidney beans, drained
* 1 410g can black eyed beans, drained
* 500ml/16fl oz beef stock
* Handful of finely chopped fresh parsley
* 2 400g cans chopped tomatoes
* 1/4tsp each dried oregano and dried basil black pepper, to season
* 225g/8oz shredded cabbage Grated Parmesan cheese (optional)
METHOD
In a pan, coated with cooking oil spray, brown the meat and drain off fat. Add all the ingredients, except the cabbage and cheese, to the meat and bring to a boil.
Lower the heat, partially cover and simmer for 30 minutes. Add the cabbage and simmer for another 15 minutes.
Serve topped with grated parmesan or freeze in individual pots
