Ingredients:
2 or 3 raw sand crabs x 500g each, cleaned and cut into portions
1 stalk lemongrass, cleaned and finely sliced
2 small red chillies, seeded and sliced
1 red capsicum, seeded and finely sliced
2 teaspoons of finely chopped ginger
2 cloves of garlic, finely chopped
1 red (spanish onion), sliced
1/2 cup coriander leaves
Small amount of olive oil, for frying.
1/2 tsp rock salt
1/2 tsp cracked black pepper
Lemon mayonnaise: (for serving)
1 1/2 cups mayonnaise
Grated rind of 1 lemon
2 tablespoons lemon juice
Fresh cracked pepper
Method:
Heat the oil in a wok or pan and add the onion until soft but not coloured.
Add the ginger and garlic until it becomes aromatic.
Add the red chillies, capsicum and the crab pieces turning occasionally until the crab changes colour.
Cook for a further 2 to 3 minutes.
Garnish the crab with coriander leaves and serve with steamed rice and a lemon mayonnaise.
To prepare the lemon mayonnaise just combine all the ingredients and stir in well.
You can garnish it with a little dill if you like.
