Wholemeal flour and the fruits of this pudding are rich in soluble fibre to help lower LDL cholesterol.
Using polyunsaturated- or monounsaturated-rich margarine also lowers LDL levels, as well as containing vitamins and important antioxidant plant substances.
Ingredients:
1 punnet of ripe plums
3 large, sweet eating apples
1 tsp cinnamon powder
125g wholemeal flour (or use half and half with plain white flour instead)
50g soft brown sugar
50g polyunsaturated- or monounsaturated-rich margarine
Directions:
1. Preheat oven to 190C/375F/
gas mark 5
2. Wash and core the apples, and cut into eight pieces, leaving the skins on
3. Wash plums, halve and remove stones
4. Combine fruits and press into the base of an ovenproof dish
5. Sprinkle with cinnamon
6. Chop margarine into little pieces, then rub into wholemeal flour until mix resembles fine breadcrumbs
7. Stir in the brown sugar and use to top the fruit mixture
8. Bake for 20 to 25 minutes until top is golden and fruit is soft
